French Cocoa Banana Crepe

【Ingredients】

one ripe banana
one crepe
chocolate chunks to taste
nut butter to taste
cinnamon powder to taste
cocoa powder to taste
a little oil


【Steps】

1. Defrost the crepe at room temperature. Slice the banana.

2. Fold the crepe in half and unfold it. Spread nut butter on the crepe and place the banana slices and chocolate chunks on the upper area. Sprinkle some cocoa powder and cinnamon powder on the top.

3. Fold the crepe twice to make it into a fan's shape

4. Heat the folded crepe in a pan with a little oil, until the chocolate chunks are melted.

 

【Tips】

Aside from banana, other fruits such as apple, kiwi, or pineapple can be used in this snack. 


Banana and Nuts Soy Smoothie

【Ingredients】

one ripe banana
30 g nut butter (or peanut/almond/hazelnut butter)
300 – 400 ml soymilk

 

【Steps】

1. Chop the banana into chunks.
2. Blend the banana chunks, nut better, and soymilk in a blender.


 

 


 

Tomato Veggie Soup

【Ingredients】

100 g marinara sauce
50 g carrot
20 g celery
100 g cabbage
300 ml vegetable stock or water
1 tsp vegetable oil
Salt and black pepper to taste
Italian seasoning to taste

 

【Steps】

1. Dice carrot and celery; slice cabbage or break it up by hand into small pieces.

2. In a pan or wok, with the oil and some salt, sauté diced carrots first, then add cabbage pieces, and at last put in diced celery. Stir-fry all of them until they turn soft and fragrant.

3. Over medium heat, put in a pot the stir-fried vegetables, marinara sauce, and vegetable stock or water to cook for 20 minutes. Continue to cook if you want the soup thicker and more flavoursome.

 

【Tips】

1. Making the soup with stir-fried vegetables will have a richer aroma. If you want the soup lighter, you can skip step 2 by stewing together raw vegetables, marinara sauce, and water. But the cooking time will be longer.

2. Along with marinara sauce as the base and the sweetness and tanginess from tomatoes and vegetables, this soup is a perfect match with a rich risotto.


 

Tasty Nut Butter

【Ingredients】

150 ~ 200 g mixed nuts (cashew, almond, walnut, pumpkin seeds, peanut…You can mix any kind of nuts as you like)
salt to taste
sugar to taste

 

【Steps】

1. Put the ingredients into a blender and blend several times. The nuts will turn slowly into pieces, grains, powder, and at last, butter.  

2. During blending, you may turn the blender on and off, pausing in between several times. The whole process could take 10 to 15 minutes depending on the amount of the nuts and the power of your blender.

 

【Tips】

1. You may add salt and sugar according to your preference. If the nuts are already flavored, it is OK not to add any salt and sugar during blending. 

2. The nut butter will be even more aromatic if you bake the nuts for a few minutes before blending. 

3. Nut butter can substitute for cream sauce in recipes.
